Google <linux smtp server howto>. Please note that, there are several different components to the email system. They work together to move, deliver or retrieve  email.

The smtp is protocol used by Mail Transfer Agent (MTA), the MTA does the hard work in moving mail around as it is responsible to move the mail from the local MTA to the destination MTA on the Internet. The Mail Transfer Agent works closely with DNS in making this all happen. The MTA uses a specific language SMTP to transfer mail on port 25, which is a standard. Several examples of MTAs are Sendmail, Postfix, and QMAIL, I would read inside
