How to get better thru-put

I have a windows mail server installed as a KVM guest on Ubuntu 12.04.  I have 1 nic bridged.  I need to improve the latency on my mail server.  Do I need to get a second nic?

Do you have a requirement for windows related features such that setting up a mail server on the Linux box not an option?
Ubuntu, postfix, MySQL squirlemail, spamassassin, etc.

Not sure where your resource based delay is.
Use perfmon within the VM to see where the bottleneck might be. Use vmstat, iostat, top,to see what the load resource issues there might be on the host.

My mail server is Exchange.  Does a KVM guest work better with a dedicated NIC?  Or is bridged just fine in most cases? (Or maybe bridged is the only way possible)

A dedicated Nic might improve if that is the bottleneck. exchange tends to consume a large amount of memory.
