How to forward Exchange account without Exchange server

Hello everyone!

We just bought a new company with Exchange 2007 standard. We are going to shutdown their current network in 1 week. We are going to add their computers to our domain, create new user account, and email for the employees.

My problem here is that, how do I forward their current exchange email account when we are going to shutdown their Exchange Server?

Add their domain name to your Exchange Server as an accepted Domain and then make sure that their new user accounts have their old email addresses added as additional email addresses, then change their MX record(s) to point to the Public IP Address of your Exchange Server.
