office building network design overhaul

I am about to overhaul one of my client's LAN from top to bottom. it's a 4 story office building with over 100 desktops, 30 printers and several servers a misc network equipment (nas, wap, etc)i have 4 Dell powerconnect switches.  my gateway will be a Sonicwall NSA device. Just need a few suggestions as to how to go about setting them up. 1st and foremost, to vlan or NOT to vlan? I was thinking of setting up a vlan for each floor. What do you guys think?

typically vlan is more of segregating if the traffic should not be mixed and data carried is of different sensitive and even protocol specific (like Voice vs Data). But I do see that for troubleshooting, if we simply plug out interface and isolate a floor during time of "crisis" or maintenance, it will be so easier and streamline the process to find root cause. but whether to do vlan, I supposed you have dept in different floor then and vlan trunking may also be considered to the core switches...
