Does the SBS 2011 Exchange 2010 Que show inbound and outbound messages or just outbound?

Queues show Outbound emails.
If you want to see the inbound email you have to enable SMTP Send and Receive Logs to see verbose details of SMTP sesions.
Also as said above you can use Message Tracking.
