moving from exchange 2003 to 2007

I have an exchange 2003 server and 2007 that are coexisiting but I want to remove the exchange 2003.  Can someone give me good steps on how to remove.

note: I always have issues moving the public folders

    If your PF havent been migrated i would say to take a PST from the Old environment and then Import them from E2k7 mailbox (Outlook profile)
