Tracking emails to gmail.com address Exchange 2007

Hello,
I have had a request to see if anyone in our company, using their work email, has sent an email to a specific address at gmail.com. Is there a way to locate this information without logging into every mailbox and checking sent items? I believe exchange logs a lot of information but I'm not sure if it keeps this information or not, and if so, where to look.

I would create a transport rule to BCC all emails going to gmail.com to a specific mailbox
