Monitor email for one user Exchange 2007

I've been asked to monitor email for one of our employees.  Specifically sent and received email to and from one outside domain.  Preferably monitored email is archived in another mailbox/program that can be mass reviewed at sporadic times

Is this possible to do via Exchange 2007 or will I need to purchase a 3rd party program?

Any suggestions are appreciated.

Thanks Simon.  I will attempt to set up transport rule and test.  Will get back to you

Your idea worked. When creating rules, is there anyway to specify an entire outside domain? In rules criteria, I can only specify people set up in active directory.  To get this to work, I had to setup mail contacts for each external email address.
