migration to office 365 checklist

Hi thanks for reading
This weekend I'm planning on migrating a small business's onsite email to hosted exchange by microsoft (I am considering other Office 365 plans but at this moment will likely use  just hosted exchange) and will post my step by step plan here (it won't be long) and if anyone has any input or sees anything I'm missing I'd appreciate a response.

Information relevant to the move
11 users
Currently they use SBS 2008, will be upgrading to Essentials 2011 or 2012 in the process
The archive their emails in public folders (15GB currently), my plan to replicate functionality with these is to convert them into a shared mailbox.

Here is what I'm planning basically
Transfer email, contacts, and calendar of clients to hosted exchange beforehand using psts
Point MX records to MS
Fresh install rather than upgrade of server
Create new users and set up people's desktops

I'd rather do a fresh install than an upgrade to the server and I'm thinking that things will simply be simpler if I upload their PST's from their outlook clients rather than attempt a migration to the cloud. I've pretty much only had bad experiences with MS migrations in the past, and even though what I'm planning would technically be more tedious, they only have 11 employees and I'm assuming I won't run into a snag.

Another line of thought is that I'll need to manually upload the public folder psts to the shared drive anyway.

I feel like I'm missing something. Will it confuse outlook to be connected to the server and then log into the 365 account? I've heard about various log in issues with outlook, but I don't understand how it can have problems if Thunderbird does not have any issues.

Would permissions for the documents they keep on the server have an issue? I'd back them up them restore them during the upgrade, but the domain would technically be new. Not sure how it would handle that. MS things always seem to run into random issues.
