Clients still logging into old exchange accounts during migration

I'm in the middle of a migration from SBS 2008 to Server Essentials 12. I'm at the point where I've connected everyone's account in the SE12 dashboard to their office 365 accounts which I've already set up. I'm just about ready to decommission the source server. I've run into a problem however. Everyone's outlooks are still connecting to the exchange still running on SBS 2008. Should I delete that profile then set up outlook again? The next step in the migration process is to delete exchange from the source server, which might fix the problem, but I'd rather get everyone's stuff working before I do something like delete Exchange. Any ideas on how I can connect everyone's outlook to their 365 account during this migration?
