I have a couple of forms that when when a word is written, example: "he's"  the word is inserted into the mysql database as "he\'s"

I also just checked through phpinfo.php and magic quotes is on.
Magic Quotes is usually the problem when you find backslashes in your data base.  Please read this article and post back with any questions.  It explains what happened and what you can do about it.
