How many iscsi controllers can their be on one LAN is there a max?

As many as you have ethernet devices. There is no restriction, other than the bandwidth they will use.

We would usually recommend a dedicated storage iSCSI LAN, which could be physical, or virtual, e.g, a Storage VLAN, or at least use a different network subnet, to normal LAN traffic.
