Server 2012 Foundation & Essentials - Hardware Requirements

I am trying to find realistic hardware requierements for both Server 2012 Foundation and Essentials. The MS recomendations look very low (and they have a history of quoting impractically low requirements) but some other recomendations I have seeb on the net seem absurdly high. The network I am quoting for is for between 5 - 10 users using MS office and an old reservations system which has low overheads.

Thanks

John
