exchange server security

When logged into a domain & using Outlook on an exchange server, is it possible for files to be copied from your local machine by an admin?

If an archive .pst created on a local machine is in Outlook, is it also located on the server?

How can the Outlook archive be available to the local Machine only and not located on the server?  

Can data be permanently deleted from the Server through the local machine?

I also learned that even when emails are deleted, they go into a log file that can be retrieved by admin.
