I am wondering if there is a way to load apps from the Windows App store onto our RDS Server 2008R2 and if not will this be something built into server 2012. I am about to deploy many windows 8 convertables and we currently use RDS. It would be cool if I could put business apps on it. For example more "tablet" friendly apps for our office products to read our email, powerpoint, word and excel files from our File server (if that exists) or any other App that may be required for business purposes.

No for S2K8R2 and S2K12 as apps are normally installed by microsoft account on a per user basis.

You can manage which apps can be installed  using group policy http://www.grouppolicy.biz/2012/08/how-manage-published-a-k-a-metro-apps-in-windows-8-using-group-policy/
