I've been trying to figure out how to trace this/stop it.. in 08 exchange queue I'm getting more and more queue backing up with undeliverable mail like the one below 26 of them.  I'm not sure how to trace where these are coming from and best way to stop?

You need to filter invalid recipients.  Presumably you don't have any Anti-Spam software installed.

Basically spammers are bombarding your server with mail destined to addresses that don't exist on your server and your server isn't rejecting the mail, it is accepting them and then realising the addresses don't exist and then sending back an NDR message.

You will need to enable Exchange Anti-Spam:

http://technet.microsoft.com/en-us/library/bb201691.aspx

Then use the following Exchange Management Shell Commands:

Set-RecipientFilterConfig -Enabled $true

and

Set-RecipientFilterConfig -RecipientValidationEnabled $true
