As paulmacd said Itunes.

In Itunes you specify the location of your music folder.

By default it is Music -  Itunes - Itunes Media

There you will find all the music files with a file extention of m4a   (mpeg-4 audio) files

You can copy or move them to another folder for safe keeping.

All the songs on your ipod will be in this folder.

Make sure in Itunes under advanced properties you select

copy files to itunes media folder when adding to library   (is checked)

What client operating system are you using?  Microsoft Windows (XP/Vista/7/8), Apple Mac OSX (10.5, 10.6..10.8) or a variant of Linux?

@trgrass & @Paul .. the user wants to copy files FROM the ipod to his computer.  Itunes only syncs music from the computer TO the ipod

Probably, but that's likely a violation of the Apple user agreement and so helping the OP bypass that is a violation of EE rules.  If the user owns the music, iTunes knows it and the user can get the music that way.  If the user doesn't own the music, why would we help him steal it?

If the OP has a different explanation, he can post it.

While there may be scenarios that describe these violations.. I have personally had a machine crash which stored all my MP3.  Not all purchased via iTunes, many rips of my own CD collection and other collections purchased via Amazon, etc...

In any case, the only place my collection now lived was on my device, and I needed a solution to copy them back to my new computer.

It's still my music, my ipod, just my new computer... No violations here.

Just look in Itunes as I stated if you have those options selected then all your music will be on your computer

No need to copy anything

Apple does not give you access to the file system for a reason.
