What is QuickTime's export to web?

I have a 1200x720 MP4.  I opened it in QuickTime and did an export to web.  This created an M4V file that is 900x540.

What is the export to web feature for?  

Is there a way to retain the original resolution?  If you want to use an HD movie, what good is export to web?

Ok, I see.  I'm doing this for iBooks Author.  I guess it means there won't be any HD movies since export for web is necessary for the iBook Textbook.  Does that sound correct?

Sounds right to me, but I have no personal experience with iBooks Author.
