Exchange Migration Question

So, our mail migration is done, users have mailboxes in our Exchange organization, mail on the old Exchange server has been forwarded to their new mailboxes, etc.  Do we want to point their old MX record to our Exchange server so mail comes our way (we plan on killing off their Exchange box).  Secondly, do we want to configure Exchange 2007 (our box) to accept mail for more than one authoritative domain?

I am sure you experts out there have done this, so what do I need to do to make sure this goes relatively painlessly!
