Does iOS not back up any cached email headers/bodies as part of the sync (in our situation we have Outlook/Exchange for email).

Does iOS not back up any documents that were opened and viewed within the corporate email application?

It seams that the itunes (or iCloud) backs up your mail settings but not the inbox wtich means no document are saved
If you want the documents to be backed up then open the document in another app: ex: lets say its a pdf file, open it in ibooks and it will be backed up there
