We are moving to Google Mail via the gapps offering.  Currently we use our own mail server and most of our users have been using IMAP for email in Thunderbird for years.  Our users have critical email on their systems  that I would like to get transfered to GMail

I cannot find something updated to do this.

Is there a way to import IMAP email from our mail server or via Thunderbird export?

The other issue is that since it is our only mail server it will be transitioning so not sure how to do it properly, or current mailserver is

ourmailserver.com and it's hosted here in the office, when I switch to Gmail it will be ourmailserver.com but be hosted at Google, so not entirely sure how to go about the migration even if I figure out how to do it.

I can switch our current server to ourmailserver2.com if that makes it easier?

There are a couple of ways to migrate from Imap/thunderbird to google apps.

1: Use the Microsoft Exchange Migration tool - don't be fooled by the name, it can import from any IMAP server. The tool can be found here:
https://support.google.com/a/bin/answer.py?hl=en&answer=172212

2: Create the accounts on Google Apps, add them to each user's thunderbird as an IMAP account, and drag the emails/folders over manually.

The best option will depend primarily on how many users - more than 5 or so and I'd be inclined to go with option 1.

When you go through the Google Apps setup process, you'll be prompted to change your MX records to point at Google's servers - once you've done this, email will be delivered to Google instead of your own server - you don't need to change any domain names.
