SBS2011 Backup Exchange Only

Ok, we have a SBS2011 Standard server that we use Carbonite for offsite backups. We also have a local external hard drive we use for backup also. Here is my problem. Our Exchange database is too big to let Carbonite back it up across the internet. What Carbonite recommends is to backup exchange data by itself to a local drive, so its software can backup the Exchange data. Now when we had a SBS2003 server I was able to schedule a Exchange only backup to a local drive and Carbonite would back it up. In SBS2011 I don't see a way for me to do a Exchange only backup using the Windows Backup software.

My question is: Is there a way using the Windows software to do a Exchange only backup? If so, how? If not, can you please provide some other options I can accomplish what I'm doing.

Ok, do have an example of that script? Because I will need this to run daily.
Ok, I found some information on doing this backup threw a batch file. One question does this backup overwrite the previous nights backup or does it append to it?

I'm asking does this method overwrite or append to the existing backup? I don't see a switch to tell it to overwrite the existing backup.
