We will be migrating / replacing old servers that have SBS 2003. Which newer OS's CAN'T you migrate to? We no longer need Exchange, so Server 2012 should suffice, but don't know if you can migrate from SBS 2003 to Server 2012 without a hitch. I would assume SBS 2011 migration "should" be safe, but hate the extra bloatware that we will not need anyhow.

Server 2008 Standard
SBS 2011
Windows Server 2012

actually neither a direct upgrade upgrade and are u on x86
new ones are x64
2012 is brand new cutting edge
(I'm teaching it but not many in production environments yet)
although I expect that to change over the next few quarters
If I were doing it today
i might go SBS2011 for the stability and features
