What you are looking for is an XSLT book.
At least, the elements you mention are from XSLT
http://shop.oreilly.com/product/9780596000530.do
is an excellent learning resource
If you are a starter, I would go for the first edition and study XSLT1 first
It is out of print, but you can get an electronic copy at a lot of places, or safari

One step back.
the X in XML means "extensible"
you can invent any element name and structure you like
You can express that in a W3C schema (or DTD, or ...), so people understand how your model looks like and know the rules to use it
There are a nuge number of very popular of such schema, expressing XML vocabularies
The most popular have books of their own DocBook, XHTML, SVG, Schema, TEI, XSLT, XSL-FO, ATOM, ...
There is no way of having "all existing XML tags" explained in one book,
if that is what you are after.
In earlier days books were written that explained a collection of those vocabularies ... but they are outdated and no longer usefull to reference
