In windows 7, how do you create a "volume shadow copy", and what tools can be used to view the files within the vsc? Is there an inbuilt tool to use this or do you use 3rd party tools?

And where on the system does it store them? How can I see any volume shadow copies on my system, when they were created? And what sort of size are they? I.e if the C drive is 200Gb what size with the vsc be?

Depends on your hardware and used space specs. Not long, about 10-20 minutes normally.

And where on the system does it store them?

By default same System Volume Information - Global Root. There you will see the files with GUID names.
