Disk utility on OS X can't burn dmg backup to external DVD writer : greyed out

My kid just got a 13.3" Macbook Pro retina (Mountain Lion ) for school & I wanted
to do a full image bootable backup for easy recovery in case it's corrupted.

When I select Disk Utility, then "CD/DVD" this CD/DVD option is greyed out.
However, when a CD/DVD (with content) is inserted into this external USB
IBM Thinkpad DVD writer, it could detect / read / run the files on the DVD.

Q1:
What did I miss or do I get this greyed out thingy?  If I burn to an external USB
3 HDD (formatted as HFS ), it backup / writes to it

Q2:
How do I create a DVD (or multiple DVD if one DVD is too small to fit) backup
(that can be booted up) for recovery?  Step by step instructions pls as this is
my first time with OS X & Macbook Pro

In the bombich url, CCC is used.  Do you have the link to download
the older version of 'free' CCC ?

Curious, how do you boot up from an external USB (& specify the
CCC image on the external USB to boot up from) ?
