Vmotion or setup a DAG & another DFS Server?

A disk in our SAN failed and another one failed or had a bad block on the same array while the spare was rebuilding.  We are able to get the SAN up however it is in a degraded state.

It lasted about 48 hours till we had to do another hard reboot of the SAN.

On the SAN we have our file store  and exchange.  We have purchased another SAN.

Should we Vmotion our file store (estimated 24hrs) and exchange (estimated 15hrs) to the new SAN or setup a DAG & another DFS server on the new SAN?

We tried to vmotion less critical servers which failed when the SAN went down the second time.

tldr: We need to move everything off the old SAN to rebuild the array while trying to maintain production & minimize our data loss window.

Man, that is a crap situation.
Are you doing a live VMotion?
Do you have the 2nd email server set up with ready to create the DAG?
I'd go with VMotion, because if you have a problem with exchange reading data from the mailbox, the DAG replication could fail, then you'd be back to doing the vmotion anyhow.

yea, pretty crappy but we have DR (appasure) but would loose about 6hrs worth of data.  Yea, we're leaning with vmotion because nothing else is setup on the new san yet.
How big are your information stores? How many are there?
Depending on replication speed, it might be faster for DAG (but very risky).
I would setup DFS for file replication. What kind of drives are on this failing SAN? SATA? SAS? How big is your array?
