HTML Email Font Size

We have an application that sends emails to customers with confirmation details about reservations made on line.

Can the font size of the email text be changed? For example, can the entire email body be enclosed in a <div> or a <span> like <div style="font: 14pt;">?

Yes.  Html email styles should all be inline.   However, you could apply the font to the body tag.  And in email, it is even recommended to go old school and used tables of tables instead of divs.
