Exchange 2010 Information Store high memory usage

Hi All,
I have Exchange2010 with Service Pack 2 roll up 6 installed.
Windows Server 2008 R2 SP1
I often encounter High Memory Utilization of upto 100% everyday. I have to restart Information Store service to let user send/receive email.
Please advise on how to overcome this.

Update SP3.

Store.exe is supposed to consume all the memory it is a hungry app.

BTW what is the RAM you're using and state a bit more in detail about number of users on this server along with various roles installed on it.

How big is your database?
What is the amount of RAM given to this box?

Does the issue happen at specific time of the day ?
What Anti virus or other 3rd party softwares do you have on the Exchange server ?
I would have also run Exmon at the time of issue to check no user is hitting with 100% Exchange causing this issue.

Enough RAM and not too huge a Mailbox database but still you should split and make smaller for better performance.

Any Antivirus ? If so are exclusions set not to scan Exchange files\folders
