Changing text on a PDF in Acrobat

I right clicked some text on a pdf form in Acrobat and selected "Replace Text".  Instead of acting as I would expect and actually the REPLACING the text...it drew a horizontal line through the text and drew a cute box with my name and the text I would like to replace in it.  How can I just change the text??

So what I found fixed the issue was going to Tools/Content/Edit Document text.  Your URL is helpful in learning more about markup and revising data in the form.
