From Server 2008 to Server 2012 there is no way to install CAL's, it is strictly an honor system, but you must retain the paperwork and be able to present it if audited.  This assumes you are referring to standard Server CALs and not RDS (Remote Desktop/Terminal Server) or SQL CALs.
