Outook 2011 is replacing ' with ? in received emails

I am having trouble with the body of an email I am reading with Outlook 2011 on the Mac.
When the email should be showing children's, it is coming through as children?s.

This doesn't happen with the same email is read by Apple Mail.

Any ideas?

Is this happening with all emails, or is it just happening with "plain text" emails?  I ask that, because it sounds like the default display font in Outlook cannot display the single quote mark. I would suggest changing the default message font in Outlook to match the default message font in Apple Mail and see what happens.
