Windows 2008 server backup config

I have a single folder I want to back up onto a NAS from a Win2008 Server.
A few issius I have is that the only option for backup seems to be daily, not weekly for example.  And also, if I backup onto a network drive it says it only keeps one copy and deletes all others.  Is there any way around these issues?  

Ideally I'd like to back it up once a week and keep two copies.

You cannot use the WSB scheduler the run weekly backups, but you can use the task scheduler with the commandline utility wbadmin to do this.

You can use a network location (i.e. \\servername\foldername) as a backup target in above commands. However, network backups will save only the latest version of the backup, deleting the previous version, as multiple versions on the network share are not supported.

or other option is you can use third party free backup software

I will suggest try out FBACKUP which is free and works good
