Exchange 2010 Forward Email from a user to an External Email Address

I have Exchange 2010.  I have a user who is going to be out and her back is with a contract company we use and does not have one of our own email addresses.  How can I forward my user's email to the backups external address:

My user is:   User@Mycompany.com  I want mail fwd from here to there

Backup user is: Backup@externalcompany.com

You could set the account to forward via the Mailbox's properties, or use a Transport rule.  Setting the forwarding in the mailbox is easier but you'd need to create a mail-enabled contact.
