Is there any inbuilt application or external apps where we can lock down imac user profile? We want to rollout imac for student use and want to setup it in such a way that after logoff, the user profile turns back to default and starts fresh.

If you click on the Apple > System Preferences > Users and groups you can do exactly what you want.  Have groups with different privileges and users inside of groups.

But does it revert profile back to default as soon that user logs out? e.g Any stored documents on desktop, web cache, cookies and so on should be cleared.

I believe so.  It's been a long time since I needed to use users in that way.

Netscaler Common Configuration How To guides

If you use NetScaler you will want to see these guides. The NetScaler How To Guides show administrators how to get NetScaler up and configured by providing instructions for common scenarios and some not so common ones.

Enable the Guest User and let the students use that.

If that's not ideal, then enable login hooks and write a script to clear the user profile.

sudo defaults write com.apple.loginwindow LoginHook /path/to/loginhook/script

There's also Deep Freeze for the Mac, which allows you to reset everything back the way it was.
