hi,
someone has a detailed guide on how to recover a single mailbox and an entire mailbox store configured in Exchange 2010 DAG with Hp dataprotector?

Just create recover db, via using PS. You can google out how to create recover db, then open backup tool and restore the back, mount the db and use PS to extract the data to PST or merge directly to a mailbox.
