I'm working with a smaller company.  They have windows server 2003 installed and, due to low budget, would like to use it for a few smaller projects.

What is the current shelf life for Windows Server 2003?

Recommended to continue to use or really push for an upgrade?

Microsoft support has been discontinued for lower versions than 2k3 sp2. You need to push for at least 2008.
