You can use a Dyndns-Domain and use this Domain as MX-Record.
For example, if you have test.dyndns.org your MX-record will be test.dyndns.org.
You can install the Dyndns-Service on a router or on the system itself with a software-client.

But i would absolutely not recommend to use this scenario in a productive environment, as is could take a bit time till the IP-change has been recognized by the Dyndns-service. So in this time incoming mails could be delayed or bounced.
To avoid this, you can get a backup-mailserver, which forwards your mails to your system. This way you can't loose mails. Ask your provider if you need this solution.
