Windows Deployment Server (WDS)

So I inherited a windows deployment server.
Images and etc already created.

I am curious if there is a way to update/patch the images or do you have to create a brand new image and install. I hate running windows updates and there is over 100 updates after I image a pc or laptop.

To begin: WDS should only be used as the transport medium, use Microsoft Deployment Toolkit or SSCM for your image requirements

Both of which will integrate with WSUS and install the updates on installation. The best scenario is to use a basic install as your installation source and then add applications and task sequences to build out the machine to your specifications. This makes it so much easier to manage.  It is also recommended that your base image for capture be made in a virtual machine to eliminate machine dependencies in your installation.

There is a wealth of information on Microsoft Deployment Toolkit. It is fairly straightforward in initial use and is customizable only limited by your imagination and skills.
