Trying to find anything on this seems to only bring up articles on going FROM on-premises exchange TO exchange online.

My boss really wants to take advantage of the Exchange Server role currently sitting idle on our new SBS 2011 standard server.  Currently we use microsoft exchange online,  and I've imported PSTs from peoples old POP3 accounts in the past, but I can't find anything how to safely and properly transfer all the exchange online mailboxes into an on premises server.  Can anyone help or at least point me in the right direction?

You will have to configure Exchange 2010 as a hybrid deployment server. There is no SBS wizard for this, and in fact some wizards will no longer work as expected. So prepare for that.

Then you can move the cloud boxes onto your on-premises server using the following:

Once you have everything moved, if you want to break the federation and move away from the hybrid configuration, you can do so, and then clean up the miscellaneous stuff to get the SBS wizards working again. The FMNW used to do this well, but I haven't tested recently.
