Audit Site Column Changes SharePoint

Is there any way we can audit the changes to a value in a site column on all lists across the farm without a lot of programming?  

i.e. report where value of 'status' goes from 'green' to 'red', etc ?

OOTB there is very little you can do. You can turn on version and that would allow you to see the different versions like when a column was updated, etc.
