We use windows search service.
When does windows Search service get updated?
Where can I find a list of options I can use for searching?

WSS will get updated like any other role or feature, when MS deems a requirement to update it.  This may be in a SP update, a hotfix or just another OS release update (R2 etc).

I'm not sure I understand what you mean for the options for searching. Do you mean in explorer using filters?

Here is a technet blog on adding items to the libraries for faster searching:

The second part of my question is satisfied but I was not clear on the first question.
When a file in the indexed location is changed or a new file is added, does it automaticly update the index database?

It should be updated in real time automatically, so once a document is added you should be able to search straight away for it.
