I don't think that UEFI is an option with a system where I am planning on installing Windows 8, the processor is too old.  Can I still install windows 8?

No, UEFI is not required.  Your processor must support the minimum standards for Windows 8 AND support enabling "NX".  What system do you have?  What processor?  How much memory/RAM?
