We have System Center 2007. How do I create a report to show what apps are installed on my Windows 7 pc's?

reporting -> reports -> Software registered in add remove program on a specific computer for one computer.

You can use count of all instances of software registered with add or remove programs to get a overall view of programs and drill down from there to see who has those.
