Remote Desktop Services connecting to SBS2003 and SBS2008

I have two deployments I am looking at for Remote Desktop Services server.

One is a SBS2003 machine and the second is a SBS2008 (not R2). These are separate environments.

Will new machines running Server 2012 and Remote Desktop Services work as terminal servers for the two SBS machines or do I need to upgrade them as well?

You should be fine using Server 2012 for RDS

Just to be clear, I can use Server 2012 as an RDS machine for a SBS2013 machine?

I think you mean SBS 2003.   Yes, you can.   The RDS server will not be a DC, only and RDS server, so you just join it to the domain and it should be fine
