Time Based Auto-Responders
Is there any way that we can create a time-based auto-responder / rule within Exchange so that if an email is sent to a particular email address outside of a certain days of the week / time, (e.g. Mon-Fri 09:00 to 17:00), it will send an auto-responder?
We wouldn't want to do this with an Outlook client, so it really needs to be a service-side solution.

you can create a transport rule to do that and then run a scheduled task to enabled/disabled it at specific times.
