Migrating from Exchange 2007 SP2 to Exchange 2010

We would like to migrating from our existing 2007 exchange server to a new 2010 server. The 2010 server would be a brand new server running 2008 R2. Does anyone know of any good guides that will walk us through the exact procedure of migrating? I see quite a few on the internet but I want to use one that someone can confirm is an easy to use, accurate guide. Thank you.

I've been following through all of the guides here. Ideally, what I'd like to do is to move all the mailboxes without interrupting mailflow, outlook anywhere or phones. I'd like to change my firewall rules at the very end. So, I guess I'm saying that I would like to keep all traffic flowing through the 2007 server until the very end, where I decomission it. Is this possible? If I just move the mailboxes, will everything continue to run as normal?
