IE8 in Windows 7 Professional not showing in installed updates
IE8 in Windows 7 Professional SP1 not showing in installed updates.
Any reasons why?

As far as I know that is the oldest version of IE for windows 7 SP1, so it isn't an update
Because it's not an update. (It's part of Windows 7).
IE8 is not supported under Windows 7 anymore - you need to update to IE9 at least.

update is not showing. According to Microsoft, the update should show under view installed updates. In order to remove it, at a future date.
Only newer versions would be showing under updates, not the originally installed version. To uninstall it you do that by turning "Windows Features" off.

Where can you see or determine what service pack is installed for IE8?
he exact version should be shown if you open it and click on "About IE" in the options menu or whatever it is called.

Moving on to the latest (proven) IE 10 is best, as jcimarron recommends (until there are some pressing needs to use IE 8).
