SBS 2011 hangs under vmware 4.1
I have an issue that has been going on for approximately 3 weeks now and I can't seem to find the root of the problem. I have an SBS 2011 server running under VMware 4.1 (Build 348481) on a Dell T310, 16GB Memory, Xeon X3430 running at 2.4GHz. I have allocated 12GB of ram to the guest (this is the only VM guest running)
The issue is after about a day (it seems to be random) the SBS box hangs. So I log into the vsphere client and send the restart command to the guest, but the command never finishes and the next thing I know the host is hung. I have to hold down the power button and bring the server back up and its fine for another day.
Here are the steps I've taken, removed any USB passthrough, removed AV from the Guest, re-installed VMware Tools. Has anyone else seen anything like this?

SBS 2011 build 7600 x64, No Service Pack, running 12GB of RAM, 4 CPUs at 2.4Ghz, 102GB disk spaec used of 200GB total disk space (thick provisioned). I'm using a perc H310 in RAID 5 with 3 hard drives. No snapshots. Let me know if I left anything out.

To date here is what I have done.
I removed VMWARE tools
I removed Virtual CDROM
I reduced the number of CPU's down to 2
The server has been up since Sunday with no reports of problems....yet.
