How long to create answer file for 2008SBS to 2011SBS migration

Hi All,

I'm planning on carrying out a migration shortly from a clients 7 user 2008 SBS Server to a new 2011 SBS Server and having not done one before just wanted a very general answer to the following:

1) Roughly how long on average does it take to generate an answer file?
2) Does the migration automatically "suck" exchange mailboxes, user accounts, shares and data from old one to new one?
3) Is this whole  process likely to be doable within a couple of hours of downtime should we be aiming to do this out of hours?
